Menu inspired by their travels in Mexico and favourite ingredients:
CANAPES
Shredded chicken, tomatillo sauce and queso fresco and pickled pink onion taco on blu corn tortilla
Baja prawn taco; tempura prawn, chipotle mayo, pickled cabbage, radish, corn tortilla
Sea bass ceviche with chilli, charred corn, mint and tiger’s milk on mini spoons
Avocado mousse, jalapeno and tomato, charred sweetcorn salsa on crispy wonton crisp (Vg)
AT THE TABLE
Whipped date butter and Brickhouse sourdough
STARTER
Cornish crab salad with fresh fennel, pickled fennel, radish, chilli, lemon mayo and avocado mousse with fennel crackers
FEASTING MAIN
Paprika, thyme, lemon and garlic marinated and roasted chicken supreme and boneless thigh with salsa verde
Thyme and garlic roasted new potatoes
Hispi cabbage with garlic cream sauce and pine nuts
DESSERT STATION
Mini raspberry and almond frangipane tart

FEASTING MENU
Slow roasted pork shoulder with pork jus
Fresh green beans, balsamic vinaigrette, red onions, basil and Parmesan (V)
Rosemary roasted and garlic potatoes (V)
Veg option: slow roasted celeriac, braised puy lentils, wild mushroom, herb oil
DESSERT
Treacle tart with amaretti biscuit crumb, crystallised pecans and sweetened crème fraiche
